Application:

Sodium bisulfite is used to prevent browning (by oxidation) and to kill bacteria.

Another major application of sodium bisulfite is as a weak reducing agent in organic synthesis especially during purification.

A third application of sodium bisulfite is as a bleaching agent in refining because it can reduce strong oxidizing agents, conjugated alkenes, and carbonyl compounds.

Sodium bisulfite is a common reducing agent in industrial chemistry. Since it reacts readily with oxygen: 2NaHSO3+O2 --> 2Na+ + 2H+ + SO4 -2, it is often added to large conduit systems to prevent oxidative corrosion. In biochemistry, it helps to maintain anoxic conditions in the reactor.
